It is possible to obtain a variety of spherical products such as: mozzarella, scamorza, provola (with or without the head), ovolina, etc.. Thanks to its versatility; having a variable weight of 2.85gr to 23oz and up to 63oz for parallel piped products such as the silano, the machine also allows the user to obtain braided products of diverse diameters and lengths depending on production requirements by using an insert application to be installed in place of the serial drum mould.

The whole machine is made of stainless steel AISI 304. In addition, the parts coming into contact with the processed substances are covered with a PTFE membrane (Dupont Teflon) synthesized at high temperatures. Or, alternatively, they are made of comestible plastic materials falling under the guidelines stipulated by law for materials coming into contact with alimentary products. Unica, the machine with the plunging-arm spinning system, was designed and modelled to adapt to any moulding system. First, the curds are introduced into the manual cutting section. In this section, the curd blocks are put into the cylindrical feed-box and here they undergo a cutting action by three adjustable blades (in order to obtain slices of different thickness in relation to the desired type of process). Once cut, the paste is inserted into the spinning hopper into which, thanks to the dipping arm, it is delicately threaded. The threading speed is easily adjustable using the controls found on the general control panel; hence, adapting to any and all productive requirements with regard to the degree of humidity. The hot water needed for the threading must be furnished by the internal onsite installations to the dairy product using piping and suitable electro pumps; or, by using the hot water opening that may be installed on the machine (optional). The whey is discharged through lateral holes mounted on the tank and is sent to a collecting tank from which it is sucked out by an electro pump. The threading and moulding section are rendered independent through a watertight door that insures against any type of contamination between the two sections. The door is easily manageable using a guillotine system. Subsequent to the spinning section, the curd drops directly into the moulding section, which in this machine is fitted to the threading section. The M50B99 mould forms a single body with the threading section.
The machine is composed of the following: • The machine body is made with a double-spaced, heated processing tank where number two (1) cochleae are lodged. The spun paste introduced into the hopper is pushed into the loading mouth through the action of the variable speed number two (1) cochleae. Subsequently the paste finds itself in the final moulding section where the moulding drum is lodged, turning continuously, and formed of alveoli having diverse diameters depending on production requirements. Cochleae speed is regulated using the general control panel. In addition, the manageability of the machine is amplified by the simplicity with which the moulding drums may be changed. In fact, the change does not demand any particular operation and is extremely rapid. The general control panel is inserted into a stainless steel panel having a protection ranking IP65, including all commands and controls necessary and assembled in full accordance to the CEI standard enforced in this matter.
